Birthday Party Supplies


My darling son 1st birthday is just around the corner (9 more days to go), and we plan to have small party at nenek house together with Kenduri Kesyukuran. Actually I oredi plan ahead for the agenda but last minute daddy need to fly to Philipines on that Sunday, so the event will be very short & rushing.

How to Make Beef Stock

Bahan-Bahan:
  • 4-6 pounds meaty beef stock bones (with lots of marrow), including some knuckle bones if possible, cut to expose the center marrow, and include at least a couple veal bones if you can, for their gelatin
  • 1/2 to 1 pound of stew meat (chuck or flank steak) and/or beef scraps, cut into 2-inch chunks (optional)
  • Olive oil
  • 1-2 medium onions, peeled and quartered
  • 1-2 large carrots, cut into 1-2 inch segments
  • Handful of celery tops, or 1 large celery rib, cut into 1 inch segments
  • 2-3 cloves of garlic, unpeeled
  • Handful of parsley, stems and leaves
  • 1-2 bay leaves
  • 10 peppercorns

 

Method

1 Preheat oven to 400°F. Rub a little olive oil over the stew meat pieces, carrots, and onions. Place stock bones, stew meat or beef scraps, carrots and onions in a large, shallow roasting pan. Roast in oven for about 45 minutes, turning the bones and meat pieces half-way through the cooking, until nicely browned. If bones begin to char at all during this cooking process, lower the heat. They should brown, not burn.

2 When the bones and meat are nicely browned, remove them and the vegetables and place them in a large (12 to 16 quart) stock pot. Place the roasting pan on the stove-top on low heat (will cover 2 burners), pour 1/2 cup to a cup of hot water over the pan and use a metal spatula to scrape up all of the browned bits stuck to the bottom of the pan. Pour the browned bits and water into the stock pot.

3 Add celery tops, garlic, parsley, bay leaves, and peppercorns to the stock pot. Fill the stock pot with cold water, to 1 to 2 inches over the top of the bones. Put the heat on high and bring the pot to a low simmer and then reduce the heat to low. If you have a candy or meat thermometer, the temperature of the water should be between 180° and 200°F (boiling is 212°F). The stock should be at a bare simmer, just a bubble or two coming up here and there. (You may need to put the pot on your smallest burner on the lowest temp, or if you are using an oven-safe pot, place it in the oven at 190°F.) Cover the pot loosely and let simmer low and slow for 3-6 hours. Do not stir the stock while cooking. Stirring will mix the fats in with the stock, clouding up the stock.

4 As the stock cooks, fat will be released from the bone marrow and stew meat and rise to the top. From time to time check in on the stock and use a large metal spoon to scoop away the fat and any scum that rises to the surface. (Do not put this fat down your kitchen drain by the way. It will solidify and block your pipes. Put it in a bowl or jar to save for cooking or to discard.)

5 At the end of cooking time (when you want to end the cooking is up to you, 3 hours minimum, 6 to 8 hours if you can do it) use tongs or a slotted spoon to gently remove the bones and vegetables from the pot (discard them, though if you see a chunk of marrow, taste it, it's delicious). Line another large pot (8-quart) with a fine mesh sieve, covered with a couple layers of cheesecloth if you have it. Pour the stock through the sieve to strain it of remaining solids. Let cool to room temperature then chill in the refrigerator.

One the stock has chilled, any fat remaining will have risen to the top and solidified. The fat forms a protective layer against bacteria while the stock is in the refrigerator. If you plan to freeze the stock however, remove and discard the fat, pour the stock into a jar or plastic container. (You can also remove the fat, and boil the stock down, concentrating it so that it doesn't take as much storage space.) Leave an inch head room from the top of the stock to the top of the jar, so that as the stock freezes and expands, it will not break the container.
Makes about 4 quarts

How to Make Chicken Stock

Method 1: Leftover bones & skin

  •  Leftover bone & skin
  • Celery
  • Onions
  • Carrot
  • Parsley
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
1 Letakkan tulang & kulit ayam ke dalam periuk besar dan isi kan dengan air . Tambahkan sayuran seperti celery, bawang, carrot, parsley (optional). Tambahkan  garam & pepper.

2 Rebuskan sehingga mendidih dan kecilkan api sehingga air menjadi setengah. Didihkan dgn api perlahan sekurang-kurangnya 4jam.

3 Kemudian asingkan tulang-temulang dari sup tadi.



Method 2: Chicken backs, wings, and legs.
  • 4 lbs of chicken backs, wings, and or legs yang telah dipotong 2
  • 1 large yellow onion, chopped.
  • Olive oil
  • 2 quarts of boiling water
  • 2 teaspoons of salt
  • 2 bay leaves
1 Panaskan olive oil di dalam periuk besar. Tumiskan onion sehingga bewarna kekuningan/brown lebih kurang 2~3 minit & angkat ke dalam mangkuk besar.

2 Tambahkan separuh dari ayam tadi ke dalam periuk & tumiskan sehingga warna kepucatan, lebih kurang 4 ~ 5 minit. Angkat ayam tadi dan letakkan ke dalam mangkuk besar berisi onion tadi. Ulangi method ini untuk sebahagian lagi ayam yang tinggal. Kemudian masukkan semula ayam & onion tadi ke dalam periuk. Perlahan kan api, tutup periuk & masak sehingga semua jus ayam tadi keluar, lebih kurang 20minit.

3 Sementara ayam tadi masak, isikan  rebus air di dalam kettle.

4  Bila ayam tadi dah masak selama 20minit, besarkan api & tuangkan air yang telah mendidih tadi. Tambahkan garam & bay leaves. Kemudian perlahankan api semula & tutup periuk & masak selama 20minit.

5 Tapiskan ayam tadi & simpan stock ayam tadi di dalam peti sejuk(refigerator) selama 2 hari atau frozen selama beberapa bulan (max 3mos)

 

Method 3:

  • 4 pounds chicken
  • 7 cups water
  • 1 large onion, halved
  • 3 stalks celery
  • 3 carrots, cut into 2 inch pieces
  • 1 bay leaf
  • 1 teaspoon grated fresh ginger
  • salt to taste
  1. Letakkan ayam ke dalam periuk besar yang sedang panas. Tambahkan air & tutup periuk sehingga mendidih kemudian perlahankan api dan biarkan ia mendidih selama 1 jam.
     2. Selepas itu, asingkan ayam tadi dari periuk, tinggalkan air sahaja. Sejukkan ayam & asingkan kulit & tulang dari isi ayam tadi. Campakkan tulang & kulit ayam tadi ke dalam periuk sup tadi & tambahkan onions, carrots, celery, bay leaf, ginger & salt. Biarkan mendidih selama 3 to 4 hours.

Menu baby sakit


 Salam monday to all mommies yang mengunjungi blog blog QasehOhara ini...blog untuk berkongsi recipe my baby to all mommies out there. Hari ni operasi membersihkan sawang di blog ini...hehe al-maklum dah seminggu tak update anything sebab my darling son admit KPJ Kajang Specialist Hospital due to High Fever. Satu minggu juga lah I amik cuti (unpaid tu....sebab dah takde leave langsung) huhu
Tapi tak kisah lah...janji baby mummy sihat, daddy kerja kuat cari $$$$ banyak2 yer hihihi ;D

So bila demam nie, Abbie oso ada throat ulser & gigi yang ke-7 kat bawah tu tumbuh...memang takde selera makan...susu pun sangat la kurang...drip air sampai 3 botol....my MIL kata baby demam tak boleh makan, kalau tak mo menyusu pun tak pe, sebab air drip tu dah memang mengeyangkan....tapi as a mother yang selalu tengok my darling son makan (sebab dia memang pemakan) so i'm still worried.
Bila my MIL balik Johor, I pun buat menu kat bawah tu...(bubur hospital + buah pisang yang daddy belikan) hehe berselera.....
So next time when baby you all demam & takde selera makan, maybe you all oso can try out simple menu ni...baby sakitkan tekak pahit, so kalau bubur plain tak membangkitkan selera so tambahkan pisang untuk menambahkan manis bubur tersebut....;)

Vegetable Fettuccine With Mint

Bahan-bahan;
1 celery stalk, chopped
1 carrot, peeled and chopped
4 oz (around 1 cup) fettuccine
1 tbsp olive oil
2 tbsp fresh mint(daun pudina), chopped

Method:
- Steam/boil carrot & celery.
- Boil fettuccine sehingga lembut.
- tosskan
- Panaskan olive oil & tumiskan daun pudina
- Campurkan carrot, celery & pasta kemudian tuangkan olive oil +daun pudina tadi
- serve

Ratatouille Cheezy Pasta (10mos above)

 
Bahan-bahan;
4 oz (1 cup) elbow macaroni
1 garlic clove, crushed
1 tbsp olive oil
1/2 red onion, chopped
1 small terung purple , diced
1 small timun jepun , diced
8 oz (1 cup) fresh tomatoes, diced
2 tbsp fresh basil, chopped
1 tbsp Parmesan cheese, grated
pinch freshly ground black pepper

Method:
- Masak pasta seperti arahan yang tertera di pek tersebut & toskan.
- Panaskan olive oil dengan api sederhana & goreng garlic & onion selama 1 minit.
- Masukkan terung purple & timun jepun & tumiskan sehingga syuran tadi lembut (lebih kurang 5~10minit). kacau sentiasa utk mengelakkan hangus.
- Angkat & biarkan dahulu.
- Tumiskan tomato sehingga kecut (menjadi separuh)
- Masukkan basil & masak selama 2 minit.
- Kemudian masukkan kembali terung purple,timun jepun & pasta ke dalam kuali tadi  gaul & angkat.
- Masukkan ke dalam pinggan & taburkan Parmesan cheese tadi.
- Serve

Quick And Easy One Pot Beef Stew (10mos above)

Bahan-Bahan;
4 oz (1 cup) medium pasta shells
8 oz (1 cup) lean beef, cincang halus or blend
1/2 small onion, chopped
1 carrot, sliced
1/4 red bell pepper, cut into thin strips
10 fresh mushrooms, sliced
1 tomato, chopped
4 fl oz (1/2 cup) homemade beef stock
1 daun salam (jangan tanya ako mana nk carik yer ekeke)
2 tbsp fresh parsley, chopped
pinch freshly ground black pepper (optional)
4 oz (1/2 cup) frozen peas , thawed


Method:
- Campurkan semua bahan ke dalam kuali besar KECUALI black pepper, pasta & frozen peas
- Tutupkan dengan penutup kuali dan dengan api perlahan biarkan masak selama 1 ~ 1.5jam dan kacau sesekali.
- Kemudian campurkan black pepper (optional) & pasta masak utk 10minit & kacau sentaiasa.
- Finally tambahkan peas & kacau serata.
- Serve

Fettuccine Cheesy Beef (10mos above)

Bahan-Bahan;
4 oz (1 cup) fettuccine
2 oz (1/4 cup) butter
1 onion, sliced thinly
8 oz (1 cup) sirloin steak
1 1/2 tbsp flour (tepung jagung)
pinch freshly ground black pepper (optional)
16 fl oz (2 cups) homemade beef stock
4 oz (1 cup) mozzarella cheese, grated
2 oz (1/2 cup) Parmesan cheese, grated

Method;
- Panaskan butter & goreng bawang merah (onion) sehingga keperangan & angkat.
- Masak fettuccine mengikut arahan yang diberi di pek tersebut.
- Cincang atau blend steak into small cubes dan goreng dengan menggunakan butter or sedikit olive oil sehingga keperangan.masak.
- Masukkan bawang goreng tadi ke dalam kuali tersebut.
- Di dalam mangkuk berasingan, campurkan tepung jagung dengan black pepper & tambahkan ke dalam kuali daging tadi & kacau mesra.
- Sedikit-sedikita, tambahkan beef stock & kacau pelahan sehingga 10minit. daging masak.
- Tuangkan daging tadi ke atas pasta yang telah di masak tadi & taburkan mozzarela & permesan cheese tadi.
- Kemudian bake di dalam oven 190C selama 20minit atau sehingga cheese berwarna keperangan.
- Serve dengan green bean ;)

Method:
- Mix multi-grain with hot water
- mix with banana (lenyek2 dlm bowl tu)
- mix milk/water kalau terlalu pekat
- serve

Nie menu yang saya nak share dengan all mommies especially when they travel...so tak perlu risau nk bg baby makan puree dalam bottle..even we on journey pun masih boleh serve homemade food tau...
Macam saya, dalam kereta mmg ada basket yang ada milk, thermos & saya standby pisang & multi-grain siap2 dlm bowl...sampai time matan, baby saya letak dalam car seat & saya bancuh puree ni...habis licin...cuma multi-grain nie ada bau sikit mebi sebab pelbagai grain dalam tu...ni 1st time bagi baby Cosway Multi-Grain...so far xde allergy pulak...Alhamdulillah sebab dlm multi-grain ni pun terdiri daripada oat, beras perang, meras merah, beras hitam & mcm2 good grain...

Homemade healthy finger food

Fruits

  • Cut-up pieces of banana or soft pear/apple (steam first)
  • Baked apple cubes
  • Melon cubes
  • Pieces of avocado
  • Sliced kiwi 
  • Blueberries

Vegetables

  • Chunks of cooked sweet potato
  • Peas
  • Cooked & small pieces asparagus

Other healthy snacks

  • Lightly toasted bread or bagels

Salam mommies.... baru lepas balik lunch.....sungguh kenyang Alhamdulillah...dan bila sampai office dok teringat la pulak kat si tecik nie...huhu mummy windu baby....apa nak masak yang terbaik tersedap teristimewa dari mummy untuk baby hari ini? erm....pagi tadi mummy sempat keluarkan Avocado puree dari freezer....tapi ingat nanti nak beli Banana di cafe...but....hari ni cafe mummy takde buah Banana...huhu
so mummy dok pikiaq apa lah mau bikin dengan itu Avocado....my darling son dah tak mo makan avocado alone sebab rasanya yang plain...nak mix dengan Red Apple macam dah jemu aje...(actually mummy yang bosan kott dok prepare bahan yang sama) so pikiaq punya pikiaq dapat la idea.....
Pumpkin BananaCado puree.....yezzaa....ada frozen Pumpkin puree di freezer...alangkah baik kalau di rumah ada maid...boleh aja mummy call bibik untuk keluarkan frozen pumpkin puree itu...ialah...mummy terbaca tak elok kalau kita terus panaskan tupperware yang baru keluar dari freezer...ia akan merosakkan sifat tupperware itu...macam mana nk explain erk...huhu yang pasti...terbaik, kene keluarkan dulu baru boleh steam jangan kuarkan terus masuk steamer. huhu
Al-maklum...mummy kerja di PJ, rumah di kajang...perjalanan pulang took 1jam untuk sampai d rumah...kalau balik 530...sampai rumah 645 lepas amik baby...so mummy need to rush to prepare baby meal...

Bahan-bahan:
1 cup (3sudu makan) pumpkin puree
1/2 Avocado puree
1/2 Banana

Method :
- disebabkan pumpkin & avocado ni frozen...so kenelah steam dulu
- banana tu just lenyek2 kan aje
- bila dah steam, mix pumpkin, avocado & banana tadi
- kacau sebati & serve 
 nie bukan pic tengah menguap...sebaliknya menganga mulot tomei tu minta d suap ;)

ermmm.....yumm yummm yummy ;)

- Mix puree with oat & add bit hot water
- stirr & serve warm

Baby Alex dengan air liur meleleh


Ini lah buah hati kesayangan amba...hehe namanya Dhiya Alexander Tay
Baby Alex tak reti menyusu badan direct...mebi sebab susu mummy keluar lewat...only day 5 baru kuar susu yang manyak..tapi too late..baby love puting bottle dari puting mummy huhu
Tapi mummy never give -up mummy pumping susu sampai baby 4mos...alhamdulillah selebihnya mummy dah tak larat nk pumping lagi,,,,tapi mummy syukur baby mampu full bf for 4mos even bukan direct
Now baby sihat, dah 11mos dan  rasanya baby sudah 10kgs!
Baby jugak tak suka isap puting...tapi dia suka isap jari...tu gambar candid...payah nak capture sebab dia suck left tumb & tangan kanan akan tutup mulutnya itu...malu la konon...hehehe
Selain isap ibu jari kiri, baby oso suka isap ibu jari kaki...hahahha orang kata, kalau isap ibu jari kaki, maknanya baby nak adik...hahaha betul ka??? nanti mummy & daddy buat adik ya ;P

Selain tu jugak, air liur baby Alex asyik meleleh ja dari lahir.....ada masa ia stop...ada masa ia datang balik....
Seperti orang tua-tua kata...masa mummy pregnant ada makanan yang mummy tak dapat/tak sempat makan...yess memang ada huhu iaitu Taiwan Beef Glass Noodle di Ampang Point tu huhu...
yelah dulu sebelum kawen duduk di Setiawangsa dekat dengan Ampang, sekarang duduk di Kajang..jauh la semata2 nak g makan kat Ampang tu...so sampai sekarang masih tak berkesempatan nak matan noodle tu...( sekarang bukan air liur baby aje yang mengalir , air liur mummy pun sama hhuhu)
Mak kata pegi makan mee tersebut & oleskan sedikit kat mulut baby...InsyaAllah air liur meleleh tu stop...(tapi masih tak sempat)

Tapi MIL cakap,  cara orang cina ialah pergi ke rumah kakak hubby (hanya rumah kakak hubby, rumah abang adik or sedara tak boleh) lap mulut baby dengan kain lap meja kakak dia tanpa pengetahuan kakak dia...huh.....betul ke tak saya tak pernah buat sebab....kotor lah nak lap kain lap meja kat mulut my baby yang tomei tu huhuhu

so mengalir la air liur itu sampai sekarang....bibs...ada dekat 15helai di beri d rumah baby sitter...setiap masa he will wear bibs..or else..leher & leher baju di dada tu basah kuyup....lenjan...

Betul ke petua itu benar? atau sampai masanya baby akan berhenti sendiri? my hubby tak percaya...dia cina moden hahhaha so i want to wait till baby 1 tahun, kalau masih tak berhenti....nak jugak ajak hubby makan Taiwan Beef Glass Noodle & proof him yang petua melayu itu betul gagaggaga (harap-harap la )

Bahan-bahan;
1/4 isi ikan Salmon
Serumpun Broccoli
2'' Carrot
1/2 biji pink potato
2tbsp bubur brown rice
sebatang kayu manis
sedikit olive oil

Method:
- Seperti biasa, brown rice dimasak menggunakan slow cooker
- Gaulkan olive oil keatas salmon tadi
- bungkuskan dengan alluminium foil bersama sebatang kayu manis tadi & bake selama 20min pada 180C
- Steam Pink potato, broccoli & carrot
- Blend bahan-bahan steam bersama isi ikan salmon yang siap di masak (kayu manis boleh di buang)
- Campurkan bersama bubur brown rice or blend together with brown rice
-Serve


Semalam...mummy sempat lagi membuat lagi puree dari separuh biji labu...menjadikan stok puree labu  10 bekas huhu

Brown Rice vs Red Rice

Red Rice ( Beras Merah)

- Red rice is a type of unpolished rice that has higher nutritional value than white rice or polished rice.
- Cooking time is usually longer than white rice and has a nutty flavor and sweeter taste.
- It is rich in fiber content, Vitamin B1 & B2, iron and calcium.
- It is highly recommended for heart patients and diabetics.
- It is also popular among health freaks and fitness enthusiasts as its high fiber content helps gain less weight.


Benefit of Red Rice:
1) Fiber
Red rice benefits one in the same way as whole grain foods. It is loaded with fiber. Fibers are stored in the gastrointestinal passage for a long time, thus they keep our stomach full and keep supplying us with energy. With increased fiber intake, hunger pangs are less and calorie intake is automatically restricted. People on diet or weight loss regime are thus recommended red rice instead of white polish rice. Fibers also help prevent cancer, gallstones, childhood asthma and controls obesity.

2) Anti-oxidants
Red rice being whole grains is a good source of three kinds of anti-oxidants, water soluble, insoluble and fat soluble. Red rice is a source of carbohydrate that supplies us energy as well as the nutrients of bran oil that is Omega-3 fatty acids. It is because red rice has some part of bran left on it. Though both brown and white rice originate from the same plant the difference lies in their hulling process. When only the outermost cover is reduced, we get brown rice. Further hulling and polishing results to rice to become white in color.
Brown rice is more nutritious than white rice and also contains higher levels of vitamin E, vitamin B1, B3, B6, and minerals like potassium, magnesium and iron.


Benefit of Brown Rice :
1) Prevents colon cancer- Consuming brown rise reduces the risk of colon cancer. This health benefit of tice is due to the selenium content present in brown rice. Also, the fiber content in brown rice is high which helps the colon in a long way.

Manggo & Pink Potato Puree with Chicken & Brown Rice

Manggo & Pink Potato Puree with Chicken & Brown Rice

Bahan-bahan ;
1 potong manggo
1/2 biji pink potato
sedikit isi ayam
1/2 tbsp brown rice

Method ;
- Brown Rice & isi ayam dimasak didalam slow cooker sehingga menjadi bubur
- Steam Pink Potato
- Blend bubur brown rice with chicken dengan manggo & pink potato tadi
- Serve


Oat with Apple & Prune Puree, Yolk with Avocado Puree & Pumpkin with Chicken & Brown Rice Puree

 Oat with Apple & Prune Puree

Bahan-bahan ;
2oz blended organic baby oat
2 sunsweet prune
1/2 red apple

Method:
- Mix oat with hot water
- While steam apple & prune (no need steam oso can)
- Puree apple & prune
-Mix pureed apple & prune with oat
- Serve
(add water if terlalu pekat)


 Egg Yolk with Avocado Puree

Bahan-bahan ;
1 Organic egg yolk (yg direbus masak)
1/2 ripe avocado (pureed)

Method:
- Mix egg yolk & avocado & puree
- serve
(add water jika terlalu pekat)


 Dengan menggunakan Mebby Baby Chef Food Processor...membuat stok puree pumpkin

 tengok lah hasilnya....halus gebu, manis pumpkin puree nie... ;)


 Pumpkin puree with Chicken & Brown Rice

Bahan-bahan ;
1/2 sudu makan brown rice (di buat bubur)
4 small cube isi ayam
4 sudu makan pumpkin puree

Method:
- brown rice & isi ayam di masak dengan menggunakan slow cooker sehingga menjadi bubur
- Mix bubur beras perang & ayam dengan pumpkin puree
- Serve
